Having a toddler is a lot of fun! You basically get to be a kid all over again, doing fun things and playing with the stuff you loved as a kid and buying the toys for your own kid that you never got as a child. One of the fun summer activities I decided to try with my daughter held a close plate to my tummy, or place in my heart, something like that. We picked black raspberries on a sweltering hot day in July this summer and came home with an entire bucket for eating, baking, and freezing. Black raspberry chocolate chip pancakes became the highlight of our recent cooking endeavors!
Natalie absolutely loved the experience of picking the raspberries. She loved that we went to a farm with our bucket, climbed up the hill past a painted bear statue, and she really enjoyed finding as many berries as we could pick. I think she may have expired before I did, but we both had so much fun picking and took so long that the farm workers almost came up looking for us! All in all, we paid less than $8 for a huge bucket of berries that we promptly sampled and brought home to make into our own creations.
I personally am a huge fan of just about anything raspberry, but especially raspberry lemonade and especially raspberry with chocolate! I mixed up a glass of lemonade to share with Natalie and popped a few black raspberries in for color and flavor. Then we enjoyed some more berries with our lunch. The next day I decided to do something a little more fun and adventurous in the kitchen. I whipped up my favorite pancake recipe and added in some miniature chocolate chips.
Then I tossed in a few handfuls of freshly picked black raspberries, swirled them around a bit, and made what I believe are so far the very best pancakes of my life. Believe me, black raspberry chocolate chip pancakes are heavenly, and hard to beat. At least if you are a lover of raspberries and chocolate. And pancakes!
I made so many raspberry chocolate chip pancakes that we ate what we could, saved some in the fridge, and froze a sandwich baggie, too. I am fortunate that my little one specially requests “cold pancakes,” so I’ve found toasting the frozen cakes on a cooler setting produces a result she loves.
Black Raspberry Chocolate Chip Pancakes Recipe
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 tablespoon confectioner’s sugar
1 1/4 cups milk
3 tablespoons butter, melted
1 teaspoon vanilla
Mini chocolate chips, to taste
Black raspberries, to taste
- Combine all dry ingredients.
- Make a well in the center and add the milk, egg, melted butter, and vanilla.
- Once pancake mix is fully incorporated, add in miniature chocolate chips to taste. (Usually a handful or two does the trick.)
- Add in black raspberries and swirl, stirring gently to incorporate. A little swirl of raspberry juice makes these even better.
- Lightly spray nonstick oil or butter on your griddle.
- Pan fry as you would any pancake recipe, flipping once the bubbles appear and bottom of pancake is golden brown.
- Serve immediately. Delicious with butter!
My daughter loves these and if your kids like pancakes, they’ll probably enjoy raspberry chocolate chip pancakes, too. In fact this recipe is a great one for the whole family to enjoy, even when you have breakfast guests. I think the most difficult thing is going to be waiting until next July to pick more black raspberries!
